Rice Ingredients

  • 1 1/2 cups jasmine rice Fluffy and fragrant.

Instructions
 

Marinating the Cod

  • In a mixing bowl, whisk together honey, olive oil, soy sauce, lemon juice, minced garlic, grated ginger, paprika, black pepper, and red pepper flakes (if using).
  • Pat cod fillets dry, season lightly with salt, and place in a shallow dish.
  • Pour marinade over cod, ensuring each fillet is coated. Marinate for 30 minutes.

Preparing the Jasmine Rice

  • Rinse jasmine rice under cold water until it runs clear.
  • In a saucepan, combine rinsed rice, chicken broth, and a pinch of salt.
  • Bring to boil, then reduce to low heat and cover. Simmer for about 18 minutes.
  • Let it stand for 5 minutes, then fluff with a fork and mix in butter.

Searing the Cod

  • Preheat oven to 400°F (200°C).
  • In a large skillet, melt 2 tbsp butter over medium-high heat.
  • Add marinated cod fillets, searing for 2-3 minutes on each side until golden brown.
  • Add lemon slices and reserved marinade to the pan.

Baking the Cod

  • Transfer skillet to the oven and bake for 10-12 minutes, or until cod flakes easily with a fork.

Plating the Dish

  • Spoon jasmine rice onto each plate, top with a cod fillet, and drizzle the pan sauce over.
  • Garnish with fresh parsley.

Notes

To enhance flavor, marinate cod for longer or overnight. Always pat the cod dry before marinating and keep an eye on it while baking to avoid overcooking. Pair with a garden salad or roasted vegetables.
