Preparation

  • Slowly drizzle in the extra-virgin olive oil while whisking until the dressing is smooth and emulsified.
  • Fold in the finely chopped shallots.
  • Gently toss in the sliced peaches, cucumbers, and blueberries until even coated.
  • Top the salad with thinly sliced basil and crumbled feta cheese. Serve immediately.
