  • 2 pieces boneless, skinless chicken breasts, sliced into thin strips Juicy and tender, perfect for absorbing flavors.

  • 1/2 teaspoon garlic powder For easy garlic flavor infusion.
  • 8 ounces uncooked pasta (penne, fusilli, or spaghetti) The base of the meal.
  • 2 tablespoons olive oil For sautéing.
  • 3 cloves garlic, minced Fresh and fragrant.
  • 2 cups cherry tomatoes, halved Sweet and juicy.
  • 1 cup fresh spinach leaves (optional) For added nutrients.
  • 1/4 cup fresh basil leaves, chopped A must for bruschetta flavor.
  • 2 tablespoons balsamic vinegar Enhances depth of flavors.
  • 1/2 teaspoon red pepper flakes (optional) For a touch of heat.
  • 1/2 cup grated Parmesan cheese, to taste Adding creaminess.

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  • In a bowl, season sliced chicken with Italian seasoning, garlic powder, salt, and pepper. Ensure every piece is evenly coated.

Cooking

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat and cook the chicken until golden and cooked through, about 5-7 minutes. Remove and keep warm.
  • In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant.
  • Add cherry tomatoes and cook for 4-5 minutes, stirring until they become tender and start to burst.
  • If using spinach, stir it in now with the balsamic vinegar and red pepper flakes, cooking until the spinach wilts.
  • Return the cooked chicken to the skillet to soak in the flavors.
  • Add the drained pasta into the skillet and mix until uniformly combined.
  • Fold in the grated Parmesan cheese and chopped basil.
  • Serve garnished with torn basil leaves and extra Parmesan cheese.

Notes

Serve with a side salad or garlic bread for a complete meal. This dish is perfect for casual gatherings or weeknight dinners.
