Preparation

  • Gradually whisk in 1 cup of stone-ground grits.
  • Reduce the heat to low and allow the grits to cook slowly, stirring occasionally, until they thicken, about 15-20 minutes.
  • Stir in 2 tablespoons of unsalted butter and 1/2 cup of heavy cream.
  • Season with salt and adjust the Cajun seasoning to taste.

Cooking

  • Heat a large skillet over medium heat and add the sliced Andouille sausage.
  • Cook until the sausage turns golden brown and develops crispy edges.
  • Add minced garlic and the shrimp to the skillet.
  • Cook until the shrimp turn pink and opaque, about 3-5 minutes.
  • Squeeze 1 tablespoon of fresh lemon juice over the cooked shrimp mixture.

Serving
