Ingredients
  

For the Apples

  • 6 large large apples (preferably Granny Smith) Tart and crisp, perfect for balancing the sweetness of the caramel.
  • 6 sticks sturdy sticks To hold your apples for easy dipping.

For the Caramel

  • 2 cups granulated sugar Base for your luscious caramel.
  • 0.5 cup light corn syrup Ensures a smooth and glossy finish.
  • 1 tsp kosher salt Enhances the sweetness of the caramel.
  • 1 cup heavy cream Adds richness to the caramel texture.
  • 4 Tbsp unsalted butter, softened Provides a velvety finish.

For Serving

  • Finely chopped peanuts, mini M&Ms, and/or crushed Oreos Optional toppings to add extra flavor.

Preparation

  • Start by bringing a large pot of water to a boil.
  • While you wait, fill a large bowl with ice water.
  • Once the water is boiling, remove the pot from heat, add the apples, and let them sit for about 10 seconds.
  • Drain the apples and thoroughly dry each one with a clean towel or paper towel.
  • Immerse the apples in the ice water for about 2 minutes.
  • Insert a stick into the top of each apple and refrigerate.

Making the Caramel

  • In a heavy saucepan over medium-high heat, combine the sugar, corn syrup, salt, and 1/4 cup water. Bring to a boil.
  • Once boiling, stop stirring and let it cook undisturbed until it turns a deep amber color (about 350° on a candy thermometer).
  • Carefully remove it from heat and slowly stir in the heavy cream.
  • Add the softened butter and stir until smooth and glossy.
  • Cook over medium-high heat, stirring occasionally, until the thermometer reads 245°.
  • Transfer to a heatproof bowl and allow to cool for 15 to 20 minutes.

Dipping the Apples

  • While the caramel cools, pour your desired toppings onto a plate.
  • Carefully dip each apple into the warm caramel, lifting it to let excess caramel drip off.
  • Immediately dip the apple into your chosen toppings, then place on a platter.

Notes

For best results, ensure that your apples are thoroughly dried. Using a candy thermometer helps to achieve the perfect caramel consistency. Consider preparing the caramel a day in advance and dipping the apples just before serving.
