Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add olive oil and sauté the sliced onions until golden brown, about 10-15 minutes.
  • Add the sliced potatoes to the skillet and season with salt and pepper. Cook until slightly softened, about 5-7 minutes.
  • While your vegetables are cooking, crack the eggs into a bowl and whisk them together with salt and pepper until frothy.
  • Pour the egg mixture over the onion-potato blend in the skillet.
  • Sprinkle the frittata with feta cheese.
  • Bake in the preheated oven for 25-30 minutes until puffed and lightly golden.
