Preparation

  • Preheat the oven to 325°F (163°C). Line the bottom and sides of a baking pan with parchment paper.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup sugar. Press the mixture into the bottom of the lined pan to form a solid crust.
  • Bake the crust for 10 minutes and then allow it to cool completely.

Filling

  • In another bowl, beat the softened cream cheese with ½ cup sugar until smooth and creamy.
  • Add the eggs one at a time, mixing until just combined. Then mix in the vanilla extract and sour cream.
  • Pour the creamy filling over the cooled crust, spreading it evenly.
  • Bake for 25 minutes until the edges are set but the center still has a slight jiggle. Let cool in the oven for an additional 10 minutes.

Cooling and Caramelization

  • Let the cheesecake bars cool to room temperature for about 30 minutes, then refrigerate for at least 1 hour.
  • When ready to serve, lift the bars out of the pan using the parchment overhang and cut into squares.
  • Sprinkle granulated sugar on each square and use a kitchen torch to caramelize until a crispy, golden crust forms.
  • Serve immediately and enjoy!

Notes

Use room temperature ingredients for a smooth mix. Avoid overmixing and cool gradually in the oven to prevent cracking. Using parchment makes it easier to cut the bars.
