  • 3 cloves garlic, minced Provides a fragrant kick.
  • 1 tablespoon all-purpose flour Serves as a thickening agent for the cheese sauce.
  • 1/2 cup whole milk Contributes to a creamy texture.
  • 4 oz. cheddar cheese, shredded, divided For melty goodness.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit.
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Rub cut sides with oil and season with 1 teaspoon of salt, then place cut-side down on a baking sheet.
  • Roast until tender and browned, about 35 to 45 minutes.
  • Let cool slightly before shredding the squash with two forks.

Broccoli Preparation

  • Microwave the broccoli in a covered bowl with 1/4 teaspoon salt and 1 tablespoon water until bright green and tender, about 1 to 2 minutes.

Cheese Sauce Preparation

  • In a large skillet over medium heat, melt the butter.
  • Add the chopped onion and 1/2 teaspoon salt, cooking until softened.
  • Incorporate the minced garlic and cook for another minute.
  • Stir in the flour and cook for about 1 minute until a paste forms.
  • Gradually whisk in the milk and remaining water, bringing to a simmer until thickened, about 1 to 2 minutes.
  • Remove from heat and stir in 3 oz. of shredded cheddar cheese until melted.

Combine and Broil

  • Combine shredded spaghetti squash with the cheese sauce and broccoli until mixed.
  • Return the mixture to squash shells, top with remaining cheddar cheese, and broil until bubbly, about 1 to 2 minutes.

Notes
