Ingredients

Cookie Dough Ingredients

  • 1 cup unsalted butter, softened softened for best consistency
  • 2/3 cup granulated sugar adds sweetness to the dough
  • 2 large egg yolks lends richness and a tender crumb
  • 1 teaspoon vanilla extract adds aromatic warmth
  • 2 cups all-purpose flour creates the sturdy base
  • 1/2 cup unsweetened cocoa powder for a deep chocolate flavor
  • 1/4 teaspoon salt enhances taste

Filling and Topping

  • 1/2 cup cherry jam or preserves provides a burst of fruity goodness
  • 1/2 cup semi-sweet chocolate chips, melted for drizzling on top

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Let your unsalted butter soften for about 30 minutes until creamy.

Mixing

  • In a mixing bowl, cream the softened butter and granulated sugar together until fluffy.
  • Beat in the egg yolks and vanilla extract until well combined.
  • Gradually add in the flour, cocoa powder, and salt, mixing until a uniform dough forms.

Shaping and Baking

  • Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  • Use your thumb or a small spoon to make an indentation in the center of each ball.
  • Fill each indentation with a generous dollop of cherry jam.
  • Bake the cookies for about 12-15 minutes, or until the edges feel firm.
  • Cool them on a wire rack before transferring to a serving platter.
  • Melt the semi-sweet chocolate chips and drizzle them over the cooled cookies.

Notes

Ensure butter is adequately softened for fluffy dough. Avoid overfilling thumbprints with jam to prevent overflow.
