Instructions
 

Preparation

  • In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and kosher salt until well combined.
  • In another bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and fluffy.
  • Mix in the egg and vanilla extract, continuing to beat until fully incorporated.
  • Gradually combine the dry ingredients with the wet mixture and mix until just combined.
  • Gently fold in the finely chopped pecans.
  • Cover the dough with plastic wrap and refrigerate for at least 1 hour.

Baking

  • Preheat your oven to 350°F (175°C).
  • Scoop the dough into rounds and press a caramel into the center of each one, then roll into a ball.
  • Place the cookie balls on parchment-lined baking sheets, spacing them a few inches apart.
  • Bake in the preheated oven for 16 to 18 minutes.
  • Allow the cookies to cool on the sheets for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for at least one hour to prevent spreading during baking. Use parchment paper for easy cleanup.
