  • 1/2 cup unsalted butter Softened to perfect creaminess

For the coating

  • 2 cups semi-sweet chocolate chips Rich and decadent
  • 1 tbsp coconut oil or shortening Optional for smooth coating

Preparation

  • In a large mixing bowl, combine creamy peanut butter, softened butter, and vanilla extract. Blend until smooth.
  • Gradually add powdered sugar, one cup at a time, mixing until a thick, pliable dough forms.
  • Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  • Freeze the balls for about 30 minutes to firm them up.

Chocolate Coating

  • Melt the semi-sweet chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. Add coconut oil if desired.
  • Using a toothpick, dip each ball into the melted chocolate, coating them completely while leaving the top bare.
  • Return the dipped balls to the baking sheet and chill for 20-30 minutes until the chocolate sets.
  • Smooth out any imperfections with a small spoon before serving.

Notes

Ensure all ingredients are at room temperature for smooth blending. Don’t rush the freezing time for proper chocolate adherence. Use high-quality chocolate for the best flavor.
