  • 6 large large eggs Rich and tender, ensures easy peeling.
  • 1 piece ripe avocado Buttery and smooth, peeled and pitted.
  • 3 tablespoons mayonnaise Creamy delight for the filling.
  • 1 teaspoon Dijon mustard Zesty and aromatic.
  • 0.5 teaspoon sriracha sauce Adds a kick of heat.
  • 0.25 teaspoon smoked paprika Offers a warm, smoky flavor.
  • to taste salt Enhances all the flavors.
  • to taste freshly ground black pepper For a peppery touch.
  • 2 tablespoons fresh chives Finely chopped, for garnish.

Preparation

  • Start by placing 6 large eggs in a saucepan and covering them with cold water. Bring it to a boil, cover, and let them sit for 10-12 minutes.
  • Once the cooking time is up, transfer the eggs to an ice-water bath for 2-3 minutes.
  • Gently tap each egg on the counter to crack the shell, starting peeling from the larger end.
  • Slice each egg lengthwise, carefully removing the yolk halves and placing the whites on a serving platter.

Filling Preparation

  • In a mixing bowl, combine the egg yolks with avocado, mayonnaise, Dijon mustard, and sriracha. Mix until smooth.
  • Season the mixture with smoked paprika, salt, and freshly ground black pepper to taste.
  • Use a piping bag or zip-lock bag to fill the egg whites with the avocado mixture.
  • Garnish with a sprinkle of smoked paprika and freshly chopped chives.

Notes

Use fresh eggs for better taste and texture. Adjust sriracha according to spice preferences. Eggs can be made ahead and filled just before serving for best flavor.
