Preparation

  • In a large bowl, using a handheld mixer on medium speed, beat the softened cream cheese and butter together until light and fluffy (about 2 minutes).
  • Gradually add in the confectioners' sugar, brown sugar, and pure vanilla extract, mixing until smooth and creamy.
  • Gently fold in mini chocolate chips until evenly distributed.
  • Scoop the mixture onto overlapping sheets of plastic wrap and form it into a ball shape.
  • Cover tightly with plastic wrap and freeze until firm (about 3 hours).
  • Mix rainbow and silver sprinkles in a small bowl.
  • Transfer the chilled ball to a platter and coat with sprinkles. Serve with Nilla wafers and pretzels for dipping.

Notes

Make sure your cream cheese and butter are at room temperature for easy mixing, and fold in the chocolate chips gently.
