For the Crab Filling

  • 1 lb lump crab meat Fresh and succulent, bringing a sweet ocean flavor.
  • 1/4 cup mayonnaise Creamy and rich, binding all the ingredients perfectly.

Instructions
 

Preparation

  • In a large mixing bowl, gently combine the lump crab meat with mayonnaise, Dijon mustard, Worcestershire sauce, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper. Be careful not to break the crab meat too much; you want those lovely, tender chunks to shine.
  • Lay an egg roll wrapper on a clean surface in a diamond shape. Place 2-3 tablespoons of the crab mixture near the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Moisten the top corner with a bit of water to seal. Repeat until all the filling has been used.

Cooking

  • In a skillet, pour in vegetable oil and heat over medium-high until it reaches 350°F (175°C).
  • Add the egg rolls to the hot oil in batches, carefully placing them in to avoid splashing. Fry for about 3-4 minutes or until golden brown and crispy.
  • Remove the egg rolls from the oil and drain on paper towels.

Serving

  • Serve warm with your favorite dipping sauces, perhaps a tangy sweet chili sauce or a zesty lemon aioli.

Notes

Serve fresh for the best texture. Consider healthier alternatives by baking instead of frying. Experiment with different fillings such as spinach or various types of seafood.
