Instructions
 

Preparation of Pie Crust

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Add the chunks of shortening, using a pastry cutter or fingers to work it into the flour until it resembles coarse meal.
  • Stir in the vinegar along with 4 tablespoons of ice water. Mix gently until it starts to coalesce.
  • Form the dough into two balls, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Ensure the dough is chilled before handling.

Preparation of Filling

  • Preheat the oven to 350°F (175°C).
  • Unwrap one ball of the dough and place it in a pie pan, pressing it gently into the bottom and sides.
  • Brush the bottom crust with egg white for moisture retention.
  • In a saucepan, melt the butter over medium heat, then stir in the flour to form a paste.
  • Gradually add the water, sugars, and spices, bringing it to a boil, then simmer until slightly thickened.
  • In a bowl, toss the sliced apples with cranberries, pour the warm mixture over the fruit, and mix gently.
  • Pour the filling into the prepared pie crust.

Baking

  • Roll out the second ball of dough to create a lattice crust or cover the filling entirely.
