Instructions
Preparation
- Cook the fettuccine according to package directions until al dente. Drain and set aside.
- Season the cubed chicken with Cajun seasoning, salt, and pepper, massaging the spices into the chicken.
Cooking
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and sauté for about 5-6 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring well. Let it come to a gentle simmer.
- Add grated Parmesan cheese, stirring until the sauce is smooth and creamy. Let it simmer until slightly thickened.
- Return cooked chicken to the skillet and add the drained fettuccine, tossing gently to coat in the sauce.
- Garnish with fresh chopped parsley and serve warm.
