  • 1 teaspoon fresh thyme leaves Earthy and herbal, giving a beautiful aroma and taste.
  • flaky sea salt For that perfect finishing touch, adding a delightful crunch.

Preparation

  • Preheat your oven to 425°F and arrange a rack in the center.
  • Melt the butter in a small pot over medium heat. Keep an eye on it to prevent burning.
  • Stir in the grated garlic until it froths and becomes fragrant, about 1 minute, then remove from heat.
  • Trim and slice the russet potatoes into long, square blocks and then into 1/8 inch slices.

Baking

  • Arrange the potato blocks on a parchment-lined baking sheet, slightly pushing them apart.
  • Brush the blocks with garlic butter and season with kosher salt and thyme leaves.
  • Bake for 30 to 40 minutes until tender and crispy, then finish with flaky sea salt before serving.

Notes

For a healthier version, use olive oil instead of butter. Experiment with different seasonings or top with Parmesan cheese during the last 5 minutes of baking. Let the garlic infuse the butter for added flavor, and avoid overcrowding the baking sheet for crispiness.
