  • 2 cups leftover mashed potatoes Rich and creamy, infused with butter and seasoning.
  • 1 cup cheese (cheddar or mozzarella) Opt for a cheese that melts beautifully.
  • 1 cup panko breadcrumbs Provides an extra crunch.
  • 2 whole eggs Beaten to create a coating.
  • to taste salt and pepper Essential for seasoning.

Preparation

  • Preheat your oil to 375°F (190°C) or preheat your air fryer to the same temperature.
  • In a large mixing bowl, combine the leftover mashed potatoes with a pinch of salt and pepper. Mix until well combined.
  • Take a small amount of the mashed potato mixture, flatten it in your palm, and place a piece of cheese in the center. Mold the mixture around the cheese to create a round ball.
  • In another bowl, beat the eggs together to make a rich coating.
  • Dip each ball into the egg mixture, then roll it in panko breadcrumbs for a crust.

Cooking

  • Fry the potato balls in hot oil for about 4-5 minutes until golden brown. If using an air fryer, cook for 10-12 minutes, flipping halfway through.
  • Allow the potato balls to cool slightly before serving warm.

Notes

For best results, ensure your leftover mashed potatoes aren’t too watery. You can add herbs or spices for extra flavor.
