Preparation

  • In a medium saucepan, bring 2 cups of low-sodium vegetable broth to a gentle simmer over medium heat.
  • Stir in 1 cup of pearled couscous and cover the pot. Cook uncovered for 8-10 minutes, stirring occasionally, until the couscous is tender yet chewy.
  • In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat.
  • Sauté 2 minced cloves of garlic for about 30 seconds until fragrant.
  • Add in 1 cup of diced bell peppers and 1 cup of diced zucchini. Sauté until slightly softened but still crisp.
  • Drain any excess liquid from the couscous and combine it with the sautéed vegetables in the skillet. Toss gently.
  • Squeeze the juice of 1 lemon over the mixture and season with salt and pepper to taste.
  • Heat through for an additional minute, then transfer to a serving bowl and enjoy warm or at room temperature.
