Preparation

  • Preheat your oven to 300°F (150°C).
  • Pat the chuck roast dry and season generously with salt and pepper.
  • Heat olive oil in a Dutch oven over medium-high heat. Sear each side of the roast for 5-7 minutes until golden brown.
  • Reduce the heat to medium-low and add onion and celery. Cook for 8-10 minutes until softened.
  • Stir in garlic, tomato paste, and Worcestershire sauce; cook for an additional minute.
  • Deglaze the pot with chicken stock, scraping any browned bits from the bottom. Return the roast to the pot.

Cooking

  • Cover tightly and braise in the oven for about two hours.
  • Add potatoes and carrots, cover again, and continue cooking for an additional hour until fork-tender.
  • Remove the roast and veggies. For gravy, thicken using cornstarch mixed with cold water.

Notes

Tips include always patting the meat dry before seasoning for better sear, and not rushing the cooking time for tenderness.
