Cooking Process

  • Heat the olive oil in a large pot over medium heat. Allow the oil to warm up, letting it shimmer.
  • Sauté the onion, garlic, and ginger until fragrant, about 2-3 minutes.
  • Add the sliced carrots and chopped celery, and cook for another 5 minutes, stirring occasionally.
  • Stir in the ground turmeric and coat the vegetables.
  • Pour in the vegetable broth, bring to a gentle boil, and then simmer for about 20 minutes.
  • Add the chopped kale and chickpeas (if using) and cook for an additional 5-7 minutes.
  • Finish with lemon juice, salt, and pepper to taste before serving warm.
