Base Ingredients

  • 1 cup Medjool dates, pitted Soak in warm water for 10-15 minutes if dry.
  • 1 cup mixed nuts (almonds, walnuts, or pecans) Keep them chunky for added texture.
  • 1/2 cup peanut butter (or any nut butter) Can substitute with sunflower seed butter for nut-free option.
  • 1/2 cup rolled oats Can replace half with shredded coconut for a tropical twist.
  • 2 tbsp chia seeds Can substitute with pumpkin or flaxseeds for variation.

Preparation

  • In a food processor, blend the pitted dates until they form a sticky paste.
  • Add the mixed nuts to the processor and pulse until small chunks remain.
  • Incorporate the peanut butter, rolled oats, and chia seeds into the mixture and blend until combined.
  • Roll tablespoon-sized portions into balls using your hands.
  • Place the balls on a parchment-lined tray and refrigerate for at least an hour to set.

Notes

Energy bites can be stored in an airtight container for up to two weeks in the fridge or frozen for three months. Experiment with flavors by adding spices or using different nut butters.
