Instructions
 

Preparation

  • Season the chicken thighs with salt and pepper.
  • In a large pot, heat 1 tablespoon of sesame oil over medium heat.
  • Add the seasoned chicken thighs and cook for 5-7 minutes on each side until browned.
  • Remove the chicken from the pot and slice it into bite-sized pieces.

Cooking

  • In the same pot, add the remaining sesame oil, garlic, ginger, and chili pepper. Sauté for about 2 minutes until fragrant.
  • Pour in the chicken broth, soy sauce, and chili paste. Simmer for about 5 minutes.
  • Add the ramen noodles and cook according to package instructions.
  • Introduce the sliced chicken and baby spinach. Stir until the spinach wilts.
  • Serve in bowls, adding a soft-boiled egg on top if desired, garnished with green onions and sesame seeds.

Notes

Use high-quality chicken broth for the best flavor. Adjust spice levels to taste, and don’t overcook the noodles.
