Instructions
 

Preparation

  • Separate the egg whites from the yolks into two different bowls, ensuring no yolk gets into the egg whites.
  • In the bowl with the egg yolks, add the milk, vanilla extract, and optional lemon zest, whisking until combined.
  • Gradually sift in the all-purpose flour and baking powder, stirring until a smooth batter forms.
  • Using a clean mixer or whisk, beat the egg whites until they form soft peaks, then slowly add the sugar while continuing to beat until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture in three parts, preserving the airiness.

Cooking

  • Heat a skillet over low heat and lightly grease it with oil.
  • Spoon the batter into the skillet, cover, and cook for 4-5 minutes until golden underneath. Flip carefully and cook for an additional 4-5 minutes.
