Preparation

  • Begin by separating the egg whites and yolks into two separate bowls.
  • In the bowl with the egg yolks, whisk together the milk, vanilla extract, granulated sugar, flour, and baking powder until the mixture is smooth.
  • In another bowl, beat the egg whites until soft peaks form, then gradually add remaining sugar while beating until stiff peaks form.
  • Gently fold the whipped egg whites into the yolk mixture without deflating the bubbles.

Cooking

  • Preheat a non-stick skillet over low heat and lightly grease it.
  • Pour 1/2 cup of the batter for each pancake and cover the skillet with a lid.
  • Cook for about 5 minutes, then carefully flip the pancake to cook the other side until golden brown.
  • Serve immediately with your favorite toppings.

Notes
