Ingredients
  

For the frittata base

  • 8 large large eggs Creamy and rich, offering an excellent protein source.
  • 2 Tbsp skim milk Light and creamy, making the eggs fluffy.
  • 2 tsp dried oregano Earthy and slightly sweet, perfect for a pizza essence.
  • 1.5 cups marinara Bold and saucy, the heart of the dish.

For the toppings

  • 1/2 cup shredded mozzarella Melty and stringy, the ultimate pizza cheese.
  • 1/4 cup sliced pepperoni Savory and slightly spicy, adding that classic pizza touch.

For the sautéed vegetables

  • 1 Tbsp extra-virgin olive oil A smooth and aromatic oil that adds richness.
  • 1 small onion, diced Sweet and savory, providing a beautiful base flavor.
  • 2 cloves garlic, minced Fragrant and intense, introducing a lovely aroma.
  • 2 cups baby spinach Tender and vibrant, packed with nutrients and freshness.
  • to taste Kosher salt Essential for enhancing flavors.
  • to taste Freshly ground black pepper For a mild kick and depth of flavor.

Instructions
 

Preparation

  • Preheat the oven to 425 degrees.
  • In a medium oven-proof skillet over medium heat, heat the olive oil.
  • Add the diced onions and minced garlic, cooking until tender—this should take about 5 minutes.
  • Stir in the baby spinach and season with a pinch of salt. Cook until the spinach wilts.

Combining Ingredients

  • In a large bowl, whisk together the eggs, dried oregano, skim milk, and marinara. Season with salt and freshly ground black pepper to taste.
  • Pour the egg mixture over the sautéed vegetables in the skillet. Allow it to cook until the edges start to set, about 4 to 5 minutes.

Baking

  • Sprinkle the shredded mozzarella and sliced pepperoni on top.
  • Transfer the skillet to the preheated oven and bake until the eggs are fully set, around 5 to 6 minutes.

Serving

  • Once baked, remove from the oven and allow to cool slightly before serving warm.

Notes

Use a cast-iron skillet for better heat distribution and prevent overcooking the eggs. Feel free to experiment with toppings.
