Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract, then mix in the sour cream and milk until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the Fruity Pebbles cereal, being careful not to crush them.
  • Pour the batter into the prepared loaf pan and smooth the top. Top with additional Fruity Pebbles for crunch.

Baking

  • Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best results, ensure butter is at room temperature and avoid over-mixing the batter. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
