  • 4 lb Red Bliss potatoes Known for their creamy texture.
  • 1 head garlic Roasted for sweetness.
  • 1.5 sticks butter Melted for richness.
  • 1 cup heavy cream For creaminess.
  • 2 Tbsp balsamic vinegar Adds sweetness and acidity.
  • 1 Tbsp chopped fresh parsley For garnish.
  • 1 splash Extra-virgin olive oil For roasting garlic.

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Drizzle olive oil over the head of garlic and wrap it tightly in foil. Bake for about 45 minutes until golden and soft.
  • In a large pot, add the Red Bliss potatoes, covering them with water. Sprinkle in some kosher salt before bringing to a boil. Cook until tender, about 30 minutes.

Mashing

  • Once the potatoes are fork-tender, drain and transfer them to a large bowl. Mash until smooth and creamy.
  • Gradually add the melted butter, heavy cream, and roasted garlic. Stir well.
  • Drizzle balsamic vinegar into the mixture and season with extra kosher salt to taste.

Serving

  • Garnish with freshly chopped parsley and serve warm.

Notes

Serve with roasted chicken or grilled steak. Can be made ahead of time and reheated. Always taste and adjust seasoning before serving.
