Instructions
Preparation
In a medium bowl, whisk together ground allspice, cinnamon, ginger, cloves, nutmeg, pepper, and salt.
Place the chopped semisweet chocolate on top of the spice mixture in your bowl.
In a small saucepan over low heat, gently heat the heavy cream until it begins to simmer but does not boil.
Pour the hot cream over the chocolate and spice mixture, letting it sit for 5 minutes to melt the chocolate.
After 5 minutes, whisk the mixture until smooth and glossy.
Pour the ganache into an 8 x 8 baking pan, cover with plastic wrap, and refrigerate until firm, about 1 hour.
Rolling the Truffles
Scoop out 16 rounded tablespoons of the cooled ganache, coat them in the crushed gingersnaps, roll into balls, and return to the baking sheet.
Use the remaining ganache to form 8 additional uncoated balls.
Freeze the baking sheet for at least 30 minutes to help set the truffles.
Coating
In a heatproof bowl, microwave white chocolate and vegetable oil until melted and smooth—stirring every 15 seconds.
Coat each of the uncoated truffles in white chocolate, letting the excess drip back into the bowl.
Sprinkle with crushed gingersnap crumbs for an elegant finish.
Drizzle leftover melted white chocolate over some of the coated truffles.
Chilling
Refrigerate the truffles until firm, at least 30 minutes or up to overnight.

Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
