Layering Ingredients

  • 32 cookies store-bought or homemade gingersnap cookies The crunchy element that pulls everything together.

Instructions
 

Preparation

  • In a medium pot over medium heat, combine the chopped apples, brown sugar, lemon juice, and cinnamon.
  • Stir often, allowing the mixture to soften until the apples give off their juices and the mixture thickens into a syrup, approximately 8-10 minutes.
  • Let it cool.

Making the Filling

  • In a large bowl, beat the softened cream cheese with the caramel sauce until smooth.
  • Gradually add the heavy cream and beat until stiff peaks form.

Layering

  • Line a 9" x 5" loaf pan with plastic wrap.
  • Spread one-quarter of the whipped cream mixture in the bottom.
  • Add a layer of gingersnap cookies followed by one-third of the apple mixture.
  • Repeat layering twice more, finishing with whipped cream and gingersnap cookies on top.
  • Freeze for at least 5 hours.

Serving

  • To serve, invert the cake onto a cutting board, remove the pan and plastic wrap.
  • Drizzle with additional caramel sauce.
