Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch by 5-inch loaf pan by brushing it with olive oil.
  • Line the pan with parchment paper, leaving a 2-inch overhang, and brush the parchment with olive oil.
  • In a medium bowl, whisk together the all-purpose flour, kosher salt, and baking powder until combined.
  • In a large bowl, beat the granulated sugar and olive oil together until smooth and glossy.
  • Add the eggs one at a time, beating until light and fluffy after each addition.
  • Mix in the lemon zest, fresh lemon juice, and vanilla extract until just combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Scrape the batter into the prepared loaf pan and spread evenly.

Baking

  • Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Glazing

  • Whisk together the confectioners’ sugar, additional lemon zest, and 2 tablespoons of fresh lemon juice until smooth.
