Ingredients
  

Filling Ingredients

  • 2 cups cooked rice Tender and fluffy, serves as a hearty base for the filling.
  • 1 can black beans, drained and rinsed (15 oz) Creamy and packed with protein.
  • 1 cup cooked protein (ground beef, chicken, carnitas, etc.) Choose your favorite; ensure it’s halal.
  • 1/2 cup salsa or pico de gallo Fresh and tangy.
  • 1/4 cup sour cream Adds a creamy, zesty element.
  • 2 tbsp taco seasoning Infuses the filling with vibrant flavor.
  • 1 diced jalapeño (optional) For added heat.
  • 1/4 cup diced onion Aromatic and sweet once cooked.
  • 2 cloves garlic, minced Adds fragrant depth to filling.
  • Fresh cilantro chopped For fresh garnish.
  • Butter or olive oil for frying Essential for a crisp, golden exterior.
  • Extra cheese for the outside More cheese is always a good idea!
  • Optional additions (corn kernels, diced tomatoes, avocado or guacamole, hot sauce, pickled jalapeños, lettuce or spinach) Customize to your preference.

Instructions
 

Preparation

  • Warm the rice with a splash of water and mix in half of the taco seasoning for flavor.
  • In a large bowl, combine the seasoned rice with black beans, cooked protein, salsa, and remaining taco seasoning. Mix well and taste; adjust seasoning if needed.

Assembly

  • Lay each tortilla flat on a clean surface. Place one-quarter of the filling in the center of each tortilla. Add a dollop of sour cream and heap of shredded cheese.
  • Fold in the sides of each tortilla over the filling and roll tightly from the bottom to form a burrito.

Cooking

  • Heat a skillet over medium heat and add butter or olive oil. Sprinkle cheese onto the skillet and place burrito seam-side down on top.
  • Cook for 3-4 minutes until the bottom is golden brown and crispy. Flip and cook the other side until golden.

Serving

  • Allow burritos to rest for 2-3 minutes after cooking, slice diagonally, and serve.

Notes

Tips for success: Use fresh ingredients, ensure skillet is hot before adding burritos, and avoid overcrowding the pan.
