Preparation

  • Begin by heating 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
  • Toss in the diced onion and red bell pepper. Sauté for 5-6 minutes until the onion turns translucent and the bell pepper softens.
  • Stir in the minced garlic, chili powder, and cumin. Cook for about a minute until fragrant.
  • Pour in the chicken bone broth, using a spatula to scrape up any browned bits from the pot’s bottom.
  • Add the fire-roasted diced tomatoes, black beans, pinto beans, green chiles, corn, and oregano. Bring the mixture to a boil.

Cooking

  • Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally.
  • Stir in the shredded chicken, letting it heat through for another 5 minutes.
  • Remove the pot from the heat, gently folding in the cottage cheese (or Greek yogurt).
