Preparation

  • Blend the pistachios in a high-powered blender until finely ground.
  • Add Greek yogurt, protein powder, almond milk, honey (if using), and vanilla extract into the blender.
  • Blend until smooth and creamy with no lumps.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  • Transfer to an airtight container and freeze for 2-4 hours until set.
  • Let sit at room temperature for 5-10 minutes before scooping and serving.

Notes

For best results, ensure your pistachios are finely ground. If you don’t have an ice cream maker, pour the mixture into a shallow dish and manually stir every 30 minutes until frozen.
