For the Grits

  • 1 cup stone-ground grits Provides a rich, creamy base that is essential for the perfect texture.
  • 4 cups low-sodium chicken broth Adds depth and flavor to the grits.
  • 1/2 cup heavy cream Ensures the grits are velvety and indulgent.
  • 4 tbsp unsalted butter Divided; brightens the taste and gives the dish a luscious shine.
  • 4 cloves garlic, minced Enhances the entire dish with a savory note.
  • salt and pepper to taste Essential for bringing out all the flavors.

For the Shrimp

  • 1 lb large shrimp, peeled and deveined Fresh shrimp for a tender and juicy bite.
  • 1 tsp paprika or Cajun seasoning Adds color and a hint of heat.

For Garnish

  • 3 green onions, chopped Adds a fresh, vibrant finish.

Instructions
 

Preparing the Grits

  • In a medium pot, pour the low-sodium chicken broth and bring it to a boil.
  • Gradually whisk in the stone-ground grits, stirring continuously to prevent lumps.
  • Lower the heat, cover the pot partially, and let the grits cook for 20-25 minutes.
  • Once the grits are tender, stir in the heavy cream and 4 tablespoons of unsalted butter. Season with salt and pepper, and keep warm.

Cooking the Shrimp

  • While the grits cook, melt 2 tablespoons of butter in a skillet over medium heat.
  • Sauté the minced garlic for 1 minute until fragrant but not browned.
  • Add the seasoned shrimp to the skillet, cooking for 3-4 minutes until they turn pink and opaque.

Serving

  • Serve the creamy grits in a large bowl, topped with the sautéed shrimp and garnished with chopped green onions.

Notes

For best results, always use stone-ground grits and allow grits to simmer gently. Don't rush the sautéing of garlic.
