  • 2 cups low-sodium chicken broth for flavor base

  • 1 ounce Parmesan cheese, finely grated (about 1/2 cup) plus more for serving

Instructions
 

Preparation

  • In a large, heavy skillet over medium-high heat, heat 2 tablespoons of tomato oil. Season the shrimp with Kosher salt and freshly ground black pepper, cook until pink and opaque, about three minutes, then transfer to a plate.
  • In a large pot of boiling salted water, cook the pasta until al dente (about 8-10 minutes, depending on the pasta type). Drain and set aside.

Cooking

  • In the same skillet, add more tomato oil along with garlic, tomato paste, and crushed red pepper flakes. Sauté for about one minute until the garlic is aromatic.
  • Add the sun-dried tomatoes, chicken broth, heavy cream, and Italian seasoning. Bring to a gentle simmer, scraping up any browned bits, and cook until the sauce slightly reduces, around five minutes.
  • Stir in the baby spinach and wilt it down for about 1 to 2 minutes.
  • Toss the cooked pasta back into the skillet along with the shrimp and half of the grated Parmesan. Stir gently until the pasta is well coated in the creamy sauce.
  • Season with additional salt and black pepper to taste, cover, and let sit for about 2 to 3 minutes to meld the flavors.

Serving

  • Serve in bowls, finishing each with torn fresh basil and extra grated Parmesan.
