Instructions
 

Preparation

  • Open and drain the canned salmon, then flake it into a mixing bowl.
  • Sauté the spinach in a skillet over medium heat for about 2 minutes until it wilts.
  • Cool the sautéed spinach slightly and squeeze out any excess moisture.
  • In a large bowl, mix together the flaked salmon, sautéed spinach, red onion, garlic, feta cheese, breadcrumbs, beaten eggs, parsley, dill if using, lemon juice, lemon zest, oregano, salt, and pepper.
  • Shape the mixture into 6-8 uniform patties.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Once hot, carefully fry the patties for about 3-4 minutes on each side until golden brown and crispy.

Serving

  • Serve hot with lemon wedges and tzatziki sauce.

Notes

Ensure spinach and salmon are well-drained to avoid soggy patties. Fry in batches if necessary for even cooking.
