For the Chicken

  • 2.25 lbs fresh chicken tenders Tender and juicy, these chicken tenders soak up all the delicious flavors.

For the Rice

  • 2.25 cups chicken broth Serves as a flavorful base.
  • 1.5 cups parboiled/converted rice Absorbs flavors well.

For the Queso Sauce

  • 2 tbsp all-purpose flour Helps thicken the queso sauce.
  • 2 tbsp butter Adds richness; use plant-based for dairy-free.
  • 1 cup milk Use almond or oat milk if needed.
  • 1 cup shredded sharp cheddar cheese Melty and flavorful; dairy-free cheese optional.
  • 1/4 tsp kosher salt Ensures the queso sauce is seasoned perfectly.
  • 1/8 tsp cayenne pepper Optional for extra spice.
  • 1/4 tsp paprika Enhances color and taste of the sauce.

Instructions
 

Preparation

  • Toss the fresh chicken tenders with cayenne pepper, oregano, paprika, cumin, kosher salt, black pepper, chili powder, garlic powder, onion powder, and olive oil. Let the chicken rest for about 10 minutes.

Cooking

  • In the Instant Pot, pour the chicken broth and sprinkle the parboiled rice over it. Place the seasoned chicken on top of the rice. Lock the lid and set to seal. Pressure cook on 'Manual' for approximately 5 minutes. Allow pressure to release naturally for 5-10 minutes before fluffing the rice.
  • After cleaning the Instant Pot, switch it to 'Sauté' mode. Melt the butter and whisk in the flour to create a roux. Gradually add milk, whisking until thickened and smooth. Stir in shredded cheese until melted.

Serving

  • Plate the fluffy rice, top it with the juicy chicken, and drizzle the cheesy queso sauce over everything. Garnish with chopped cilantro or green onions.

Notes

Ensure chicken rests after seasoning for better flavor absorption. Use high-quality chicken broth for enhanced taste. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
