Marinade Base

  • 2 limes 2 limes, juiced Freshly squeezed for a bright, tangy flavor.
  • cup ⅓ cup vegetable oil (or extra virgin olive oil) Acts as the perfect base for your marinade.
  • 2 tablespoons 2 tablespoons chipotle paste (or adobo sauce) Brings a smoky and spicy depth.
  • 1 teaspoon 1 teaspoon chili powder (or flakes) Adds earthy, slightly spicy warmth.
  • 1 teaspoon 1 teaspoon sweet paprika (or smoked paprika) Adds sweetness and color.
  • ½ cup ½ cup cilantro, chopped Fresh and aromatic, brightens the dish.
  • 1 teaspoon 1 teaspoon cumin powder Brings a warm, nutty flavor.
  • tablespoons 1½ tablespoons onion powder Adds sweet and savory depth.
  • tablespoons 1½ tablespoons dried oregano (Mexican oregano preferred) Offers a subtle earthy taste.
  • 2 teaspoons 2 teaspoons garlic powder (or 2 minced garlic cloves) Infuses the chicken with rich flavor.
  • ½ teaspoon ½ teaspoon black pepper Enhances all other flavors.

Instructions
 

Preparation

  • Whisk together lime juice, vegetable oil, chipotle paste, chili powder, paprika, cilantro, cumin, onion powder, oregano, garlic powder, black pepper, and salt in a mixing bowl to create the marinade.
  • Place the chicken in a resealable plastic bag or glass dish and pour the marinade over it, ensuring it is well-coated. Seal the bag or cover the dish and marinate in the fridge for at least 2 hours or ideally overnight.

Cooking

  • For baking, preheat your oven to 400°F (200°C), arrange marinated chicken on a baking sheet with space in between, and bake for 25–30 minutes until the internal temperature reaches 165°F (75°C).
  • For grilling, preheat your grill to medium-high. Cook chicken for about 5–7 minutes per side, checking for a golden char and ensuring the internal temperature reaches 165°F (75°C).
  • Allow the chicken to rest for 5 minutes before serving for optimal juiciness.

Notes

For best results, always use fresh limes and quality oils. Taste the marinade beforehand to adjust seasoning as needed. Ensure the container is sealed to prevent flavor loss.
