Ingredients
  

For the marinade

  • 1/3 cup olive oil Helps to dissolve the spices and tenderize the chicken.
  • 1/2 cup orange juice Adds a vibrant, sweet-tart flavor.
  • 1/4 cup lime juice Brings a zesty kick that balances the marinade.
  • 1 small yellow onion, chopped Enhances the overall flavor profile.
  • 6 cloves garlic, minced Essential for authentic Mexican taste.
  • 2 oz achiote paste Provides deep flavor and stunning color.
  • 1 tbsp ground coriander Accentuates the marinade.
  • 1 tbsp ground cumin Adds a warm, nutty flavor.
  • Kosher salt To taste, enhances natural flavors.
  • 2 tsp smoked paprika Brings a subtle smokiness.
  • 2 tsp dried oregano Imparts earthiness to the marinade.
  • 1 tsp black pepper Adds a flavorful kick.
  • 1 tsp chipotle chili powder Adds a depth of heat.

For the chicken

  • 4-5 lbs bone-in chicken thighs Juicy and flavorful, perfect for marinating.

Instructions
 

Marination

  • In a large bowl or resealable bag, whisk together the olive oil, orange juice, lime juice, chopped onion, minced garlic, achiote paste, and all the spices until smooth.
  • Add the chicken thighs, ensuring they are coated in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
  • Let the chicken sit at room temperature for 20–30 minutes before cooking.

Grilling

  • Preheat your grill to medium-high heat (425°F to 450°F). Grease the grates with vegetable oil to prevent sticking.
  • Grill the marinated chicken for 5–7 minutes on each side until cooked to an internal temperature of 175°F.
  • Let the chicken rest for 5 minutes before serving.

Oven Method

  • Preheat your oven to 400°F. Line a baking sheet with foil and spray with cooking spray.
  • Arrange the marinated chicken thighs on the sheet and bake for 25–35 minutes until done.
  • For a charred effect, switch on the broiler for an additional 2–3 minutes.

Serving

  • Serve the chicken hot with warm tortillas, Mexican street corn, or cilantro lime rice, and optionally with fresh salsa.

Notes

Make sure to marinate the chicken thoroughly for the best flavor. Allow the chicken to rest after cooking to ensure juiciness. Adjust spices according to taste preferences.
