Preparation

  • Preheat your oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with cooking spray and set it aside.
  • In a large skillet over medium-high heat, add olive oil and heat until shimmering. Add the ground beef along with chili powder, coriander, cumin, salt, and pepper. Break up the beef with a spatula and cook for about 5 minutes until it is browned and fragrant.
  • Stir in black beans, red onion, red bell pepper, garlic, and corn. Continue cooking for 5 more minutes until the vegetables begin to soften and release their aromas.
  • Reduce heat to medium-low and pour in salsa. Simmer for about 7 minutes, allowing the flavors to meld beautifully. Adjust seasonings as necessary to suit your palate.

Layering

  • Layer the bottom of the baking dish with overlapping tortillas, ensuring a solid base.
  • Spread one-third of the beef mixture over the tortillas, followed by one-third of the cheese. Repeat the layering two more times, finishing with a generous topping of cheese.

Baking

  • Bake uncovered for 20–25 minutes until hot and bubbly, allowing the cheese to create a golden crust atop the lasagna.
  • Let it rest for 10 minutes before slicing. Serve with garnishes like sour cream or freshly chopped cilantro for a burst of flavor.
