  • 1 cup long-grain white rice Fluffy and fragrant
  • 1 lb lean ground beef Juicy and tender
  • 1 can (14.5 oz) fire-roasted diced tomatoes Packed with smoky flavor
  • 1 can (15 oz) black beans Rinsed, hearty and protein-rich
  • 2 cups shredded cheddar and Monterey Jack cheese Gooey and melty
  • 1 cup bell peppers Diced into sweet, colorful morsels
  • 1 medium onion Diced, aromatic and flavorful
  • 2 tbsp taco seasoning A zesty blend of spices
  • 2 cups chicken broth Rich and savory

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Coat a large baking dish with nonstick spray.
  • In a skillet over medium heat, brown the ground beef until fully cooked, breaking it up with a spatula.
  • Add the diced onions and bell peppers; sauté until softened and fragrant.
  • Stir in the uncooked rice and taco seasoning, mixing well.
  • Add the canned tomatoes and black beans, mixing well.
  • Pour in the chicken broth and stir gently to combine.
  • Transfer the mixture into the prepared baking dish, spreading evenly.
  • Top with shredded cheese.
  • Cover with foil to prevent drying out while baking. Bake for 30 minutes.
  • Remove the foil and broil for 5-7 minutes until the cheese is bubbly and golden.

Notes

Pairs beautifully with a simple green salad, homemade guacamole, or tortilla chips with salsa. Garnish with fresh cilantro or lime for a refreshing touch. Can be customized with ground turkey or additional vegetables.
