Preparation

  • In a blender, combine the eggs, whole milk, flour, granulated sugar, unsweetened cocoa powder, kosher salt, and pure vanilla extract. Blend until you achieve a smooth batter—make sure there are no lumps.
  • Let the batter rest for 5-10 minutes for the best puff.

Baking

  • Divide the batter among the prepared muffin wells, filling each one about one-third of the way.
  • Bake for 20-22 minutes, or until the sides are puffed and slightly darkened.
  • Let cool slightly before transferring to a platter.

Serving

Notes

Use room temperature eggs and milk for better puffiness. Avoid overfilling the muffin tin, and don't open the oven door prematurely as this can cause collapse.
