Instructions
 

Preparation

  • Preheat the oven to 350 degrees F and line two large baking sheets with parchment paper.
  • In a large bowl, using a hand mixer, beat the softened butter and sugar until pale and fluffy, about 2-3 minutes.
  • Add the egg and peppermint extract, mixing until fully combined.
  • Gradually add the flour, baking soda, baking powder, salt, and food coloring. Mix until just combined.
  • Fold in the chopped Andes Mints and chocolate chips.
  • Using a small cooking scoop, form small balls of dough and place them on the prepared baking sheets, about 2 inches apart.
  • Sprinkle a bit of sugar on top of each dough ball.

Baking

  • Bake until the cookies are puffed and set, about 10 to 12 minutes.
  • Allow them to cool for about 10 minutes on the baking sheet before transferring them to a wire rack.
