For the brownie base

For the mint fudge topping

  • 2 cups white chocolate chips Creamy and sweet, creating a decadent topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  • Prepare the brownie mix according to package instructions and spread evenly into the lined pan. Bake for 20 minutes and allow to cool slightly.
  • In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing well. Gradually stir in flour and salt, then fold in 1/2 cup of mini chocolate chips.
  • Press the cookie dough layer evenly over the cooled brownie base.
  • In a saucepan over low heat, combine white chocolate chips and sweetened condensed milk, stirring continuously until smooth.
  • Remove from heat and stir in the peppermint extract and food coloring if using. Fold in the remaining mini chocolate chips, then pour over the cookie dough layer.
  • Refrigerate for at least 2 hours to set. Lift out using parchment paper and slice into squares.

Notes

Ensure your butter is softened for better texture. Be cautious not to overbake the brownie layer. Store leftovers in an airtight container in the refrigerator for up to a week.
