Preparation

  • Preheat the oven to 425°F (220°C). This high temperature will ensure that your chicken crisps beautifully.
  • In a mixing bowl, combine the Dijon mustard, olive oil, honey, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Stir until all the ingredients are blended into a luscious marinade.
  • Take your whole chicken and rub this mustard mixture all over it, ensuring you coat the wings, legs, and even under the skin where possible to maximize flavor.
  • Position the seasoned chicken in a roasting pan. Tuck the wings gently under the body to prevent them from burning during roasting.

Cooking

  • Roast the chicken in your preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches a juicy 165°F (75°C). The skin should be golden and slightly crispy.
  • After removing the chicken from the oven, let it rest for 10-15 minutes before carving. This step is crucial for maintaining moisture in the meat.
