For the crust

For the filling

For the blueberry topping

  • 2 cups 2 cups fresh or frozen blueberries For a flavorful topping.
  • 0.25 cups ¼ cup granulated sugar Sweetens the blueberries.
  • 1 tbsp 1 tbsp cornstarch mixed with 2 tbsp water Thickens the topping.
  • 1 tsp 1 tsp lemon juice Adds brightness.

Instructions
 

Preparation

  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until resembling wet sand.
  • Press the mixture firmly into the bottom of a springform pan to create an even layer. Chill in the refrigerator.
  • In a large bowl, beat softened cream cheese until smooth. Gradually add powdered sugar, vanilla extract, and lemon juice, mixing until combined.
  • Gently fold in whipped cream until no white streaks remain and spread over the chilled crust.

Cooking

  • In a saucepan over medium heat, combine blueberries, granulated sugar, and lemon juice. Cook until the mixture simmers and blueberries burst.
  • Stir in the cornstarch slurry, allowing the mixture to thicken for about 5 minutes, then remove from heat to cool.
  • Pour the blueberry topping over the cheesecake, spreading it evenly.

Chilling

  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Once set, carefully release the cheesecake from the springform pan, slice, and serve chilled.

Notes

Tips: Ensure cream cheese is room temperature for easier mixing. Chill overnight for enhanced flavor.
