  • 4 slices hearty, rustic bread Choose a thicker bread for better structure.
  • 4 oz creamy goat cheese Let it come to room temperature for easier spreading.
  • 1/2 cup olive tapenade Robust and aromatic Mediterranean flavors.
  • to taste fresh arugula or spinach Optional for added freshness.
  • to taste olive oil For grilling, gives a golden finish.

Instructions
 

Preparation

  • Spread a generous layer of olive tapenade on two slices of bread.
  • On the other two slices, spread the creamy goat cheese evenly.
  • If using, layer fresh arugula or spinach on top of the goat cheese.
  • Close the sandwiches with the tapenade-covered slices, pressing gently.

Cooking

  • Heat a skillet over medium heat and drizzle in olive oil.
  • Place the sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes.
  • Flip the sandwiches and cook the other side until golden and the cheese is melted, about another 3-4 minutes.
  • Remove from skillet, slice in half, and serve warm.

Notes

For best results, don’t rush the grilling process to achieve perfectly crispy bread and melted cheese.
