  • 1 tsp pure vanilla extract adds aroma
  • 1/2 tsp kosher salt balances sweetness
  • 3 large eggs, room temperature helps mix evenly
  • 2 cups all-purpose flour creates a soft base
  • 2 1/2 cups mini pretzels, divided adds crunch
  • 1 cup butterscotch chips, divided for gooey sweetness

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 13 by 9-inch metal baking pan with cooking spray, then line it with parchment paper.
  • In a large bowl, beat together brown sugar, melted butter, peanut butter, baking powder, vanilla, and salt on medium-high speed until creamy.
  • Add the eggs one at a time, mixing on low speed until just incorporated.
  • Fold in the flour until only a few streaks remain.
  • Gently fold in 2 cups of pretzels and 2/3 cup of butterscotch chips until well mixed.
  • Scoop the batter into the prepared pan, spreading it evenly.
  • Press the remaining pretzels and sprinkle the remaining butterscotch chips on top.

Baking

  • Bake until golden brown, around 23 to 27 minutes, or until a tester comes out clean.
  • Let cool completely before using the parchment overhang to lift the blondies out of the pan and cut into squares.

Notes

These blondies pair well with vanilla ice cream or warm chocolate sauce. Be sure not to overmix the batter after adding the flour to avoid dense blondies.
