Ingredients

For the caramelized onions

  • 1 large onion, thinly sliced Provides a sweet and savory flavor when caramelized.
  • 2 tablespoons unsalted butter Used for caramelizing the onions and grilling the sandwiches.

For the sandwich

  • 1 ripe pear, cored and thinly sliced Adds sweetness and juiciness.
  • 1 medium apple, cored and thinly sliced Provides a tart contrast to the sweet pear.
  • 8 slices bread (whole grain or your choice) Provides a sturdy base; use bread that can hold the fillings.
  • 8 ounces sharp cheddar cheese, grated Adds a rich, tangy flavor.
  • 4 ounces Brie cheese, sliced Adds a creamy texture to elevate the sandwich.
  • to taste salt and pepper For seasoning.

Instructions

Caramelizing the Onions

  • Heat 1 tablespoon of butter in a skillet over medium heat. Add the thinly sliced onions along with a pinch of salt. Cook gently, stirring occasionally, until golden and caramelized, about 15 minutes. Remove from the pan and set aside.

Assembling the Sandwiches

  • Take out 4 slices of your chosen bread and spread a layer of grated sharp cheddar cheese on each slice.
  • Neatly layer the thin slices of pear and apple on top of the cheddar. Place slices of Brie on top of the fruit.
  • Spoon the caramelized onions over the Brie, and sprinkle more grated cheddar on top.
  • Place the remaining slices of bread on top, pressing down slightly.

Grilling the Sandwiches

  • Melt the remaining butter in the skillet over medium heat. Carefully place the sandwiches in the skillet, cooking each for about 4–5 minutes on each side until golden brown and the cheese is melted.

Serving

  • Remove from the skillet, cut the sandwiches in half, and enjoy while warm.

Notes

Serve with a light salad or tomato soup for lunch, or alongside freshly squeezed juice for brunch. For variations, consider using low-fat cheese or different types of bread.
